GIANT LEAPS E-learning Programme for Researchers and Professionals
The GIANT LEAPS project has developed a dedicated e-learning programme designed to support researchers, young professionals, and other stakeholders working on alternative proteins and sustainable food systems. The programme provides open and accessible educational content aimed at strengthening knowledge, building skills, and supporting competency development in areas critical to the protein transition.
The e-learning modules build directly on the scientific results generated throughout the project. They translate complex research findings into clear, user-friendly materials tailored to different professional needs. The courses are structured as flexible, non-sequential learning paths, allowing participants to engage with individual modules according to their interests, expertise, and time availability. Learners can progress at their own pace, either selecting specific topics or exploring the full thematic scope of the programme.
Developed in collaboration with consortium partners and aligned with the work carried out across all project Work Packages, the training for professionals consists of four modules, available in English.
Designing future-proof diets
Based on results from WP7, this module introduces participants to diet optimisation modelling and its application in
identifying and evaluating future-proof diets. It explores how dietary patterns can be designed to meet nutritional
requirements while reducing environmental impacts and supporting long-term food system resilience. Explore the module

Sustainability and climate assessment of alternative proteins
Drawing on WP5, this module presents the sustainability framework developed within GIANT LEAPS and examines the
environmental performance of nine alternative protein value chains. It provides insights into life cycle assessment
approaches and the role of sustainability metrics in guiding more responsible protein production and consumption.

Nutritional quality and digestibility of alternative proteins
Developed within WP4, this module brings together complementary perspectives from nutrition science to examine how
protein-rich foods are broken down, absorbed, and utilised by the body. It addresses protein quality, digestibility, and

Based on WP3, this module focuses on risk assessment scenarios for alternative proteins. It explores
safety-by-design approaches and provides guidance on identifying and managing potential allergenicity and other safety
