GIANT LEAPS at FLAVOURsome Satellite Event - Characterisation and digestibility of alternative protein ingredients
On 15th May 2025, Ever Hernandez Olivas, a postdoctoral fellow working on GIANT LEAPS Work Package 4 “Digestion and Health”, had the opportunity of delivering a keynote talk at the FLAVOURsome Satellite Event. This event was held in conjunction with the 7th International Food Oral Processing Conference in Valencia, Spain, in which Ever also presented a flash oral presentation and poster.
The goal of this satellite meeting was to foster knowledge exchange and collaboration among
researchers focused on improving consumer acceptance of plant-based protein alternatives by considering whole food
matrices and their interaction with the human body.
Ever participated in the session related to WG1 “Chemical and physico-chemical profiling of food matrices” of the
FLAVOURsome COST Action. His presentation provided an overview of research conducted at GIANT LEAPS partner Teagasc
within the project’s WP4, focusing on the characterisation and digestibility of alternative protein ingredients, most
of which are plant-based.
The event was a valuable opportunity to connect with researchers working across a range of disciplines, from oral
processing and sensory perception to consumer behaviour and ingredient functionality, all aimed at supporting the
dietary shift towards more sustainable food systems.
